Research shows that processed/lightly pasteurized Kombucha is not as effective as raw organic kombucha; the additives used in many mainstream brands to increase carbonation and sweetness negatively impact the health benefits of drinking kombucha. Homebrew kombucha is made to be consumed fresh. Raw kombucha has higher levels of all of the beneficial bacteria, probiotics, and vitamins found in Kombucha, with none of the additives or additional sugar of processed kombucha.
